Chemistry of Food and Cooking “Chocolate Chip Monster Cookies”
Flour is one of the core building blocks of baked goods, primarily, it is used to give a food item its structure. Flour is made up of gluten and starch which are proteins and carbohydrates. The proteins of the gluten within the dough solidifies when it is exposed to heat, creating a strong skeleton for the cookie to rely on. The starch soaks up any moisture that is in the cookie dough to create a mixture that is tough to refine. When in the oven, the carbohydrate reinforces itself when exposed to the heat due to the evaporation of the moisture it had kept in the dough.
My experiment helped me understand how flour reacts with the ingredients that I use in my cookie recipe. Now, I am able to control how large I want the cookies to be when baking them. My next steps would be to find out what exactly makes the cookie be able to withstand its own weight. Since I am not sure that flour is the ingredient that also makes the cookie texture different and cook time longer.

Chemistry this year was by far the best year of science class I have ever taken. We got to conduct multiple experiments that helped us learn how chemicals and elements react with each other along with many demonstrations that mezmorized us. I reviewed material that I got to take revised notes on and new topics I had a great time learning. There were many assessments that helped me further grow my knowledge in the field of chemistry. Steve was approachable with questions that we had, even ones that were asked too many times. I liked the fact that the labs took place in a professional environment up in Fort Lewis College with professors who taught there were available to help us.
